Salmon, Eggs, and Onion with Pumpernickel Crisps

Makes 4 servings.  Per serving: calories: 370   Fat: 10g  Fiber: 3g

4 large eggs
4 large egg whites
1 Tbsp. olive oil
1 large onion, thinly sliced
4 oz. smoked salmon, thinly sliced
1/2 tsp. black pepper
1/4 cup sliced chives
1 large tomato, sliced
Pumpernickel bagels or bread

1.  In a medium bowl, whisk the eggs and egg whites.  Heat the oil in a large skillet.  Add the onions and cook, stirring occasionally, until soft and golden brown.
2.  Reduce the heat to medium and add the eggs, smoked salmon, and pepper.  Cook, stirring, until the eggs are set, about 5 minutes.  Stir in chives.
3.  Toast pumpernickel bagel slices or slices of pumpernickel bread.
4.  Serve eggs with tomato slices and  toasted pumpernickel bagel or 2 slices toast.

Black Bean Salsa

This is a delicious salsa for snacking and also a great topping for tacos or rice.

1 can black beans
1 large onion, chopped
1 roma tomato, chopped
1 jalapeno pepper, seeded and finely chopped
1 line, for juicing
salt and pepper

1.  Warm beans over medium heat. Drain and rinse.
2.  Combine onions, tomoato, and jalapeno pepper in a large bowl.
3.  Add beans to bowl and stir. Squeeze lime over bowl and stir.
4.  Salt and pepper to taste.
